breakup banana bread

I still have a few things that remind me of my ex-girlfriend. One is a grey sweater that Linette keeps trying to sneak out to the Salvation Army (because I never wear it, not because it belonged to my ex-girlfriend). The other is a recipe card. My ex-girlfriend had a really great recipe for vegan banana bread. As I’m afraid that I’ll lose the recipe, I decided to post it here.

First, mash together three ripe bananas and the juice of one lemon.

Then, mix together a half-cup of brown sugar and a half-cup of oil.

Add all of these things together.

Now, in another bowl, mix together one-and-a-half cups of wholewheat flour, a half-cup of wheat germ, a half-teaspoon of salt, a half-teaspoon of baking powder, and a half-teaspoon of baking soda.

When that’s done, mix in the wet ingredients discussed above.

While you’re stirring, throw in sunflower seeds, walnuts or whatever else you like.

Bake at 375 for 30-40 minutes. You know it’s done when you can poke a knife in and pull it out clean.

My favorite way to eat it is with orange juice and peanut butter crackers. I’m not sure why that is, but I love it.
